Moringa Holy-Maté Salad Dressing with King Prawn Salad

This crunchy, fresh salad is one of my absolute favourites!  It’s super easy and quick to prepare and will leave you feeling super energised.

For the salad:

150g fresh, cooked king size prawns, rinsed

2 x  sticks of celery washed and diced

A handful of radishes, washed and sliced

A cup of baby spinach leaves, rinsed

A handful of rocket, rinsed

Half an avocado thinly sliced

A handful of coriander, rinsed and roughly chopped

Method:

Put the spinach and rocket together in a medium sized salad bowl and gently toss together. Layer the avocado slices, radishes and celery over the leaves and finally tumble the prawns over the top.

For the dressing:

3 x tablespoons of good mayonnaise - I love good old Hellman’s  (full fat)  or Stokes.

1.5 x tablespoons of a good sweet chilli sauce

1 x teaspoon of Moringa Holy Maté

Method:

Put all of the above ingredients in a small bowl and blend together until all the elements are incorporated. Add a little splash of virgin olive oil if you wish to make the dressing a little runnier.

Drizzle the dressing criss-cross over your salad, garnish with the chopped coriander (or parsley if you prefer) and enjoy!
